Homemade Fresh Pasta

Looking for the perfect accompaniment to the Lamb Tagine with Potatoes and chickpeas , I excitedly pull out the pasta attachment of the KitchenAid. Today, we are making Fresh Fettucini. Finally, my "new" pasta attachment with came with my KitchenAid mixer will be used.


Ingredients
4 Tbsp. olive oil
4 Tbsp. water
4 eggs
1 tsp. kosher or sea salt
2 cup semolina flour


Method:
Combine salt and semolina flour in mixing bowl. Attach bowl to mixer. Attach Flat beat to mixer. Pulse to mix.

Add eggs, water and oil. 

Mix with flat beater until combined.



Change to dough hook and knead for about until elastic, about 5 minutes.


Put dough into a bowl, covered with plastic wrap and rest for 20 minutes.

Divide dough into 4 portions. Take a portion of dough and run it through the pasta attachment at setting 1 or 2. Slowly, put the dough sheet through again, through processively smaller/ thinner setting until you get to the thickness you want. For the Fettucini I ended up on setting 4.


Change out the attachment to the shape of pasta you want. In this instance, I chose the fettucine attachment.






The pasta takes about 2 minutes to cook! A lot faster than dried pasta.

I serve my first batch of fresh pasta with the Lamb Tagine with chickpeas and potatoes.

  2. I have not made pan mee with this attachment yet. I generally make Mee Hoon Kuih http://kumquat-sugarnpixels.blogspot.com/2010/08/mee-hoon-kuih-in-soup.html

    I do it the old fashion way, by hand, stretching and tearing pieces of dough, into simmering soup. It is one of my children's favourite food. The hard part if finding ikan billis and peeling them. Take so long to clean/ peel them and eaten in seconds. No pre-peeled ikan billis here :(
